lapuminator, I noticed when I copy&pasted the code to notepad and then changed it to autorun.lua and ran it, the menus were all glitchy and I couldn't select any elements. I don't know why that is happening, unless there is something wrong in the code or I'm not copy&pasting right.

Not sure if anyone answered for this yet, but I will anyways.

In MOLD you can add a counter. Everytime it eats, for example, it resets the counter to 0. When it hits 100, let's say, it changes the type to SPOR (Or whatever element).

Then, when SPOR touches a surrounding suitable particle, just change it back to MOLD. Not sure about the lua equivalent, but in C++you can change the elements using part_change_type(i,x,y,PT_ELEMENT). Using surround_part (Or the equivalent) you can check for surrounding parts, and get info about them.
