When Water comes in contact with a pan that is about 200-300 degres Celsius the water will evaporate leaving a steam coating underneath the water droplets letting it "jump" around

    Fun Fact: This effect is what allows you to (breifly) stick your hand into liquid nitrogen, unharmed. Still, I wouldn't reccomend it.
